How many fruit baskets have you sent or received during the past holidays or on past birthdays? I find that specialty foods easily surpass the traditional gifts and are some of the best gifts given or received for three reasons: they’re unique, there’s a wide range of choices, and they’re tasty! During the next holiday season or for any gift-giving occasion, it will serve you well to remember that everyone appreciates receiving a specialty food gift.

 

Nobody wants to be known as having sent a gift that is a repeat gift, or that when you see it arrive, and see who it’s from, you know exactly what is inside. I know that when I see a specific fruit basket arrive each year on our doorstep, I know precisely who it’s from, and I know exactly what I’m going to do with most of the contents, and that is turn it into a quick fruit salad and be done with it. That same distinct lack of variety can rub off onto you as the gift giver.

 

The distinctiveness of a specialty food gift is in the variety. A specialty food gift once upon a time meant something from the international food section of your local grocery store. Today, it can mean anything from a set of exotic teas and candles to different fruit jams, to the most exceptional noshes you could possibly imagine, each for the discerning or curious palette.

 

The word choice refers to a variety of things, and specialty food lets you avail yourself of not only several different choices of one type of item, such as nuts, but allows you to pick and choose, say nuts and fruit, or nuts and candy, or even exotic items like chocolate caramel treats imported from Europe. And there is variety even in the most simple of items like jams, featuring not only your normal pear jam, but also a red pepper jam that will serve as a key component to a great appetizer.

 

The sure way to anyone’s heart is through their stomach, and this is never so true as with specialty foods. Often a memorable component of any cocktail hour, many of these items are not of the sweet and salty dessert classification, but rather of the antipasti tradition. A sure way to make an indelible impression is to be sure you are remembered as someone enjoys the delectable hors d’oeuvre you helped to provide.

 

One of the best specialty foods gifts I ever received was chocolate covered fruit, but fruit that you wouldn’t expect to be chocolate covered. These were being cherries and blueberries, dried, and coated in chocolate, creating such a unique flavour combination, but yet so satisfying that your five fruits a day allowance didn’t seem so hard to meet after you sampled some of these treats.

 

When you give a gift, you want it to be memorable, enjoyable, and something that the will actually surprise the recipient. As in the Japanese tradition, a gift itself should be equalled only by the way the gift is put together, or presented. A specialty food serves that purpose well, and ensures that not only the gift itself, but the way it arrives, and the presentation of the gift itself are an experience that the receiver will find indelible.

Cost – Depending on where you eat, there can be vastly different costs. Keep in mind, although this is not always the case, the less you spend, the less likely you are to get enjoyable food.

Types of food:

American – Choose this if you are in the mood for burgers, fries, shakes, or a root beer float.

Mexican – Very popular in the southwest, choose from tacos, burritos, enchiladas, tamales, and more.

Asian – A very healthy option, Asian food is rich in rice, chicken, vegetables, and seafood. For vegetarians, try tofu with your dish.

Sushi – A classy favorite, seafood, rice, and seaweed. What could be more health conscious?

South American – Rich in meat and potatoes, as well as distinct plants, Argentina is known for its grass-fed steak.

Southern – For those with healthy hearts, taste the catfish, fried chicken, and greens.

Italian – Another American favorite. Pizza, pasta, and lasagna highlight this irresistible choice. Choose from a variety of noodles, meats, and sauces.

French – The simple pleasure of visiting a cafe with a loved one, and enjoying a French pastry should entice any romantic individual to frequent this type of establishment.

Seafood – Choose from the shelled variety, and from rarities like shark, squid, and swordfish.

Types of restaurants:

Fast food – Cheap, easy, inexpensive, and almost universally unhealthy.

Order at counter – Great option because you get the quality of a restaurant, without the wait time of a sit-down establishment. You can also avoid tipping at this type of place.

Diner – Few things offer the nostalgia of sitting at the counter of a historic diner and enjoying a slice of pie and ice cream.

Sit down restaurant – This is the type of place to go to if you are looking for a more formal setting. Additionally, these establishments often offer the finest foods.

Delivery – avoid the whole process of leaving home with this option. Be aware of delivery fees and tipping that is required. Perfect for rainy days.

Sashimi is usually followed by Nigiri sushi, which is a dish made with sushi rice and fresh fish, sliced and pressed on top. The sushi courses are broken by a course of pickled ginger which helps clean the palate for the next course and allows you to individually taste the courses and enjoy your meal.

The taste of a wine can improve or worsen depending on the food that you drink it with so, by learning the basics about pairing them, you can really enhance your culinary experiences. It’s not a difficult task either, as much research and experimentation has already been done by others – with a little reading, you can some become an expert.

Here are some examples of wine and food pairings. Beef is best paired with Cabernet Sauvignon, Burgundy, Bordeaux, Zinfandel or Pinot Noir. Lamb pairs well with Bordeaux, Cabernet Sauvignon, Pinot Gris, or Medoc. Poultry served with a light sauce pairs well with Chardonnay, Chablis or White Burgundy. Poultry served with a heavy or spicy sauce goes well Zinfandel, Pinot Noir or Beaujolais. Fish is best served with Sauvignon Blanc or White Burgundy. Keep in mind though that your palate is unique to you, so if you don’t like a combination, don’t use it, even if others claim that it is wonderful.

As for other foods, those which are hardest to pair with wines are egg dishes, acidic foods, and hot and spicy selections. There are no specific rules or recommendations for these, and it’s really a case of hit and miss. When it comes to such foods, personal experimentation is the only way to find a good wine match.

There are two basic pairing approaches to choose from in general, which apply regardess of the the type of food in question. One is contrast, where the wine is different in character to the food, but the differing characteristics play off each other, and the other is complimentary, where the wine and food work together through a similar trait (such as sweetness or acidic). Either works equally well, but which to apply varies on the type of food being served.

Regional combinations are also worth paying attention to, as food originating from a particular region or country will often pair well with the local wines, as they have evolved to complement one another. So, foods and wines from France work well together, as do ones from Italy, and also ones from Spain.

Always keep in mind though that everyones tastes are different, and there are few, if any food and wine pairings that are universally liked. What might be perfect to you might be considered horrible by someone. So, don’t rule a pairing out solely on the basis of something your friend you – if the idea of a particular wine and food together sounds promising, then just give it a try.

Try to limit experimentations to your own time though, and if you’re entertaining then stick to some of the tried and tested pairings. On the point of entertaining others, remember that some people only drink one kind of wine, no matter what food is being served, and others may have a particular dislike for certain varieties of wine. Therefore, always have a selection of wines on offer and, though you can make suggestions, leave the final choice to your guests.

Water is one of the most essential food materials. It enters into the composition of the body, and without it the nutrients of foods would be unavailable, and life could not be sustained. Water unites chemically with various elements to form plant tissue and supplies hydrogen and oxygen for the production of organic compounds within the leaves of plants. In the animal economy it is not definitely known whether or not water furnishes any of the elements of which the tissues are composed, as the food contains liberal amounts of hydrogen and oxygen; it is necessary mainly as the vehicle for distributing nutrients in suspension and solution, and as a medium in which chemical, physical, and physiological changes essential to life processes take place. From a sanitary point of view, the condition of the water supply is of great importance, as impure water seriously affects the health of the consumer.

Waters are impure because of: (1) excessive amounts of alkaline salts and other mineral compounds; (2) decaying animal and vegetable matters which act chemically as poisons and irritants, and which may serve as food for the development of objectionable bacterial bodies; and (3) injurious bacteria. The most common forms of impurities are excess of organic matter and bacterial contamination. The sanitary condition of water is greatly influenced by the character of the soil through which it flows and the extent to which it has been polluted by surface drainage.

The mineral impurities of water are mainly soluble alkaline and similar compounds dissolved by the water in passing through various layers of soil and rock. When water contains a large amount of sodium chloride, sodium sulphate or carbonate, or other alkaline salts, it is termed an “alkali water.” Where water passes through soil that has been largely formed from the decay of rocks containing alkaline minerals, the water dissolves some of these minerals and becomes alkaline. The kind of alkali determines the character of the water; in some cases it is sodium carbonate, which is particularly objectionable.

The continued use of strong alkali water causes digestion disorders, because of the irritating action upon the digestive tract. Hard waters are due to the presence of lime compounds. In regions where limestone predominates, the carbon dioxide in water acts as a solvent, producing hard waters. Waters that are hard on account of the presence of calcium carbonate give a deposit when boiled, due to liberation of the carbon dioxide which is the material that renders the lime soluble. Calcium sulphate, or gypsum, on the other hand, imparts permanent hardness. There is no deposit when such waters are boiled. A large number of minerals are found in various waters, often sufficient in amount to impart physiological properties. Water that is highly charged with mineral matter is difficult to improve sufficiently for household purposes. About the only way is by distillation.

Dining Pet Peeves |

How many times have you been out to eat only to get horrible service or something you were not expecting? I can honest say that it happens more than it should. Here are some of my top pet peeves when I go out to eat.

  1. Slow/Horrible Service. When I go out to eat, I expect to get treated well. I mean, I am paying to eat at your restaurant and you are the waiter, so you think that you could do your job and wait on me, right? Apparently, this is too much for some waiters and they just ignore my constant pleas for food and drink. Do I not exist? I mean, I am a bigger guy, so it’s kind of hard to not spot me. This is seriously egregious though and needs to stop. If I am a paying customer, I expect to be taken care of as such. Plus, if the service stinks, you should expect to not get much of, if any, tip at all.
  2. Forgetful Waiters. Sticking to the waiter theme, I come to the forgetful ones. So here it is. I come in, sit down, get served right away and then order. When my food comes, it is not as I ordered it. Say for instance I order a steak. Normally I would get a side of mushrooms. This is not some out of the ordinary request I would imagine, I mean, it’s right there on the menu, and yet more often than not, I will get a steak without any mushrooms. Now maybe it’s just me, but isn’t that why you, as a waiter, carry around a little legal pad? To make sure that you get the customer order right? I thought so, but apparently it is just to make you look like you know what you are doing. Again, this all comes back to affect the tip that you may or may not now get.
  3. Poor Value for Money. This normally equals going to a spendy restaurant and getting served art for $60 instead of a salad or a steak. With all the ingredients and colors and sauces making their appearance on my plate, you would think that the portion would be bigger for what you paid. I personally hate it when I order something and get some small portion. It should say on the menu, “size not to scale.” That way, I would at least know that I am being gypped before I order.

You would think that I was trapped in a bird cage by the way some waiters don’t wait or forget or bring some small portion of food. Although there are many great places to eat out there, you’d be surprised at how often bad waiters and small portions happen. Don’t let these things happen to you.

Poppy Seed

A popular type of bagel that I can’t help being reminded of Seinfeld when I think of it. In one episode, Elaine eats a poppy seed bagel before her mandatory drug test and tests positive for opium, leading of course, to much confusion and hijinks. One of the most popular breakfast bagels, the poppy seed flavor is very appealing to many people.

Blueberry

The blueberries in this popular bagel type give it an extra fruity kick and when mixed with the right spread it can be a delicious breakfast for snack treat.  Many people think that bagels are just a breakfast food but in fact go well with many meals and dishes. I was once at the poker table one time playing a game at my buddies and he busted out the the bagels. They go surprisingly well with beer.

Cinnamon Sugar

The combo kick of cinnamon and sugar on a bagel is hard to beat. With the perfect spread I think this is hands down one of the best bagel types. Some people don’t like all the different toppings for bagels and prefer plain bagels with simple spread but I find that these type of people usually live very boring, uneventful lives.
